
Perfect for Lunch on the Go!
This sunshine is making me wish for Spring. It feels so close–so what better way to celebrate than with a delicious and fresh recipe?
Today I want to share with you a quick and easy recipe that gets me thinking about all things fresh and spring! As much as I love the idea of cooking, I don’t have the time or patience to stay in the kitchen all day (the pottery studio is calling!).
So this recipe is quick, easy and delicious–my kind of cooking.

Time: 10-12 minutes
Ingredients:
3.5 oz of couscous
7 fl oz of hot vegetable stock (chicken or bone broth works as well)
2 green onions
1 red pepper
1/2 English cucumber
2 oz of crumbled feta cheese
2 tbsp pesto
2 tbsp pine nuts (optional)
salt and pepper
Directions:
Place couscous in a large bowl and pour stock over it. Cover and leave for 10 minutes. Fluff couscous with a fork once the all stock has been been absorbed.
Chop green onions, red pepper and cucumbers. I like mine nice and thin but cut to your own preference.
Add vegetables to couscous. Mix in pesto and crumbled feta.
Top with pine nuts if you’d like. Serve and enjoy!
